Fresh Basil Pesto
Recipe from the kitchen of Courtney Tchida, our Community Outreach Manager.
- 2 cups herb leaves (basil or other)
- 1/3 cup nuts (peanuts, pine nuts, walnuts, pistachios, cashews, almonds or even sunflower seeds)
- 1/4 cup olive oil (or orange juice)
- 1/3 cup cheese (parmesan, romano, feta or chevre)
Add all ingredients, softest first and hardest last, in food processor. Process until smooth. Refrigerate or freeze for later. Delicious on pasta, veggies or even sandwiches.
