Caramel Spice Pear Butter
Recipe from the kitchen of Rick Juliusson, our Executive Director.

Ingredients
- 15 large, firm, ripe pears (or apple-pears)
- 2 cups water
- 6 cups sugar
- 1 tsp ground cloves
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 2 Tbsp lemon juice
Instructions
Core pears and cut into chunks. Cook on low heat with 2 cups of water (covered) for 30 minutes. Puree using a hand blender.
Melt 1 1/2 cups sugar, stirring until it becomes a caramelized brown syrup. Pour into pears and stir. Add 4 1/2 cups sugar, cloves, cinnamon and ginger. Boil and then simmer until thickened (about 45 min). Stir in 2 Tbsp lemon juice when done.
Pour into jars—makes 8 1/2 pint jars. Enjoy on toast, crackers, with cheese and on pancakes!
